**Ingredients:**

– 2 medium butternut squashes
– 4 slices of bacon, chopped
– 1 small onion, diced
– 3 cloves garlic, minced
– 5 ounces fresh spinach
– 1 teaspoon Italian seasoning
– Salt and pepper, to taste
– 1 cup shredded cheese (cheddar or mozzarella)
– ½ cup cream cheese, softened
– Olive oil, for drizzling

**Instructions:**

1. **Preheat Oven:**
Preheat your oven to 400°F (200°C).

2. **Prepare Squash:**
Cut the butternut squashes in half lengthwise and scoop out the seeds. Place them cut-side up on a baking sheet and drizzle with olive oil, salt, and pepper.

3. **Roast Squash:**
Roast in the oven for about 30-40 minutes until tender.

4. **Cook Bacon and Vegetables:**
In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the grease in the pan. Add the diced onion to the skillet and cook until translucent. Stir in the garlic and cook for another minute. Add the spinach and cook until wilted. Season with Italian seasoning, salt, and pepper. Remove from heat and stir in the cream cheese and shredded cheese until combined.

5. **Stuff and Bake:**
Once the squash is done, fill each half with the spinach and cheese mixture. Top with the cooked bacon. Return the stuffed squash to the oven and bake for an additional 10-15 minutes until heated through and the cheese is bubbly.
