INGREDIENTS
- – 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon of granulated sugar (for tarts made with sugar, but not required)
- 1 cup (2 sticks) unsalted butter, chilled, then cut into cubes
- 6-8 tablespoons of ice
INSTRUCTIONS
- 1. In a mixing bowl, add the salt, flour, and sugar (if you’re making an ice cream pie crust).
- 2. Incorporate the cubed cold butter into the mix.
- 3. With a pastry blender or food processor, chop pieces of butter and flour until they resemble fine crumbs with chunks of butter.
- 4. Gradually add the ice one tablespoon at a moment, mixing until the dough begins to bind. Make sure not to mix too much.
- 5. Spread the dough out on an area lightly sprayed with flour and gently work it into a ball a few times until it is elastic.
- 6. Divide the dough into two halves and form every half into a disc. Cover each disk with plastic wrap and then refrigerate for a minimum of one hour or the night.
- 7. Once ready Once you’re ready, take one piece of the dough out of your refrigerator. Allow it to sit at room temp for approximately 10 minutes, allowing it to soften a bit.
- 8. On a lightly sprayed surface, roll your dough to form a round about 12 inches in size, or enough to fit in your pie dish with a bit of overhang.
- 9. Press the dough onto your pie dish gently into the bottom and sides.
- 10. Remove dough not cut to the edges and then crimp to the desired length.
- 11. If your recipe requires a baked crust, adhere to the instructions to bake it blind. If not, you can proceed with filling and baking the pie according to the recipe.
