Teriyaki Chicken Avocado Rice Stack

Ingredients:
For the teriyaki chicken:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup teriyaki sauce
1 tablespoon sesame oil
For the rice:

1 cup long-grain rice
2 cups water
1 teaspoon salt
For the avocado:

1 ripe avocado, sliced
Instructions:
Cook the rice: Bring 2 cups of water to a boil in a saucepan. Add rice and salt. Reduce heat to low, cover, and simmer for 20-25 minutes, or until tender.
Cook the chicken: In a large skillet, heat sesame oil over medium-high heat. Add chicken and cook until browned on all sides.
Add teriyaki sauce: Pour teriyaki sauce over chicken and cook for 2-3 minutes, or until chicken is coated.
Assemble: Serve cooked rice on a plate. Top with sliced avocado and teriyaki chicken.
