Teriyaki Chicken Avocado Rice Stack 🍗🥑🍚

Ingredients
  

  • For the Teriyaki Chicken:
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • ½ cup teriyaki sauce
  • 1 tablespoon sesame oil
  • For the Rice:
  • 1 cup long-grain rice
  • 2 cups water
  • 1 teaspoon salt
  • For the Avocado:
  • 1 ripe avocado sliced

Instructions
 

  • Cook the Rice:
  • In a medium saucepan, bring 2 cups of water to a boil. Add the rice and salt, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is tender and has absorbed all the water.
  • Cook the Chicken:
  • While the rice is cooking, heat sesame oil in a large skillet over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until the chicken is browned on all sides and fully cooked through, about 6-8 minutes.
  • Add Teriyaki Sauce:
  • Pour the teriyaki sauce over the cooked chicken. Stir to coat the chicken evenly, and let it cook for an additional 2-3 minutes until the sauce thickens slightly and the chicken is glossy.
  • Assemble the Stack:
  • On a plate, place a serving of cooked rice. Top the rice with a few slices of fresh avocado, then spoon the teriyaki chicken over the top.
  • Serve and Enjoy:
  • Serve immediately while everything is still warm. Enjoy the layers of flavor in every bite!
