Four substantial Idaho potatoes, peeled and diced
1 small shallot, finely chopped
Three cloves of garlic, minced
Four cups rich chicken stock
Two cups whole milk
Half cup heavy cream
Half cup shredded cheddar cheese
Half cup crispy cooked bacon bits
Two tablespoons unsalted butter
One-fourth cup all-purpose flour
One-fourth cup chopped fresh chives
Salt and pepper, to taste
Instructions:

In a large saucepan, melt butter over medium heat. Add the chopped shallot and garlic, sautéing until tender and fragrant.
Stir in the flour, cooking for one to two minutes until it turns golden brown.
Gradually add the chicken stock while stirring, then add the diced potatoes. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until potatoes are tender.
Mash some of the potatoes to thicken the soup, then stir in the milk and heavy cream. Add salt and pepper to taste.
Serve the soup in bowls and top with shredded cheese, crispy bacon bits, chives, and a dollop of heavy cream.
