  • 1 pound ground beef (or ground turkey for a healthier option)
  • 4 medium potatoes, sliced thinly (Russets work best for creaminess)
  • 1 medium onion, diced
  • 2 cups shredded cheddar cheese (try pepper jack for a spicy kick)
  • 1 can cream of mushroom soup (homemade for a healthier version)
  • 1 cup milk (substitute with almond milk for a dairy-free option)
  • Salt and pepper to taste

Optional Add-ins

  • diced green bell peppers or mushrooms for added flavor and texture

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, brown your ground beef along with the diced onion for about 5–7 minutes. Drain excess fat if necessary.
  • In a large mixing bowl, combine the cream of mushroom soup and milk until smooth. Layer the casserole dish with sliced potatoes, half of the beef and onion mixture, then a layer of cheese. Repeat until all ingredients are used, finishing with a generous topping of cheese.

Baking

  • Cover the casserole with aluminum foil and bake for 1 hour.
  • Remove the foil and bake for an additional 15 minutes.

Serving

  • Allow the dish to cool for about 5–10 minutes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. For longer storage, wrap portions tightly in plastic wrap and freeze for up to 3 months. Thaw overnight and bake at 350°F until heated through.
