Easy Saucy Ramen Noodles

A quick and flavorful ramen noodle dish with a thick, savory sauce. Customize with your favorite veggies or protein for a complete meal!

Ingredients
  

  • For the Noodles:
  • 2 servings dry instant ramen noodle cakes about 140g total or any noodles of your choice
  • For Sautéing:
  • 10 oz extra firm tofu veggies, or mushrooms of your choice (sliced)
  • For the Sauce:
  • 1 cup water or vegetable broth
  • 5-7 tbsp soy sauce adjust to desired taste
  • 1 1/2 tsp dark soy sauce optional for color
  • 2-3 tbsp corn starch
  • 1-3 tbsp sugar maple syrup, or other liquid sweeteners (adjust to desired sweetness)
  • 2 tbsp rice vinegar white vinegar, or lemon juice (adjust to desired sourness)
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce or other hot sauce optional for spice
  • 1 tbsp sesame oil
  • 2 cloves garlic minced (optional)
  • For Serving:
  • Chopped scallions for topping
  • Sesame seeds for topping

Instructions
 

  • Make Sauce: Mix water, soy sauce, dark soy sauce, cornstarch, sweetener, vinegar, pepper, and chili garlic sauce. Set aside.
  • Boil Noodles: Cook ramen noodles until just underdone, then drain.
  • Sauté Veggies and Tofu: Sauté your veggies or tofu for 4-5 minutes.
  • Make Sauce in Pan: Sauté garlic, then add sauce mixture. Simmer for 2-3 minutes until thickened.
  • Combine: Add cooked noodles to the pan, toss to coat in the sauce, and cook for 3 more minutes.
  • Serve: Garnish with scallions and sesame seeds, and serve hot!
