Chicken Gloria
A creamy, cheesy chicken dish with tender chicken, mushrooms, and a rich cream sauce, topped with melted Swiss cheese.

Ingredients

large boneless
skinless chicken breasts, trimmed and cut in half lengthwise
Salt and freshly ground black pepper
to taste

1/2 stick, divided

sliced fresh mushrooms

garlic

all-purpose flour
plus 2 tablespoons

dry sherry

heavy cream

Swiss cheese

red pepper flakes

Instructions
Preheat oven to 375°F (190°C). Cut chicken into 6 pieces, season, and dredge in flour.
Heat oil and 1 tablespoon butter in a skillet, sear chicken for 3-4 minutes per side. Transfer to a casserole dish.
Cook mushrooms in the same skillet, then add to the casserole dish.
Make the cream sauce: Melt remaining butter, cook garlic, stir in flour, then add sherry and cream. Simmer and season.
Pour sauce over chicken and mushrooms, top with Swiss cheese.
Cover and bake for 20 minutes, then broil for 2-3 minutes until bubbly.
Rest for 5 minutes and garnish with parsley before serving.
