Chicken Gloria

A creamy, cheesy chicken dish with tender chicken, mushrooms, and a rich cream sauce, topped with melted Swiss cheese.

Ingredients
  

  • 3 large boneless skinless chicken breasts, trimmed and cut in half lengthwise
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil
  • 4 tablespoons butter 1/2 stick, divided
  • 8 ounces sliced fresh mushrooms
  • 3 cloves garlic minced
  • 1/3 cup all-purpose flour plus 2 tablespoons
  • 1/2 cup dry sherry
  • 1 1/2 cups heavy cream
  • 6 slices Swiss cheese
  • 1/4 teaspoon red pepper flakes optional
  • Chopped fresh parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Cut chicken into 6 pieces, season, and dredge in flour.
  • Heat oil and 1 tablespoon butter in a skillet, sear chicken for 3-4 minutes per side. Transfer to a casserole dish.
  • Cook mushrooms in the same skillet, then add to the casserole dish.
  • Make the cream sauce: Melt remaining butter, cook garlic, stir in flour, then add sherry and cream. Simmer and season.
  • Pour sauce over chicken and mushrooms, top with Swiss cheese.
  • Cover and bake for 20 minutes, then broil for 2-3 minutes until bubbly.
  • Rest for 5 minutes and garnish with parsley before serving.
