Add Rice and Broth: Stir in rice, beef broth, tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
Mix in Cheese and Sour Cream: Remove from heat and stir in sour cream and half of the cheese.
