Cheesy Ground Beef and Rice Casserole (

Ingredients
  

  • 1 pound ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • 2 cups beef broth
  • 1 can 14.5 ounces diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Instructions
 

  • Preheat Oven: Preheat to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cook Ground Beef: In a skillet, cook the ground beef, onion, and garlic until browned. Drain any excess fat.
  • Add Rice and Broth: Stir in rice, beef broth, tomatoes, Italian seasoning, salt, and pepper. Bring to a boil, reduce heat, cover, and simmer for 15-20 minutes.
  • Mix in Cheese and Sour Cream: Remove from heat and stir in sour cream and half of the cheese.
  • Transfer and Bake: Spoon mixture into the baking dish, top with remaining cheese, and bake for 25-30 minutes until bubbly.
  • Serve: Serve warm and enjoy!
