Preheat the Oven
Preheat your oven to 325degF (165degC). Place baking sheets on parchment paper.
Prepare the Cookie Dough
Mix the baking soda, flour, along with salt into a large bowl.
Separately in a bowl, beat the butter that has been melted along with brown sugar and granulated sugar until the mixture is smooth.
Mix with the vanilla, egg the egg yolk and vanilla until it is light and creamy. Gradually add your dry ingredients, mixing until all of them are.
Incorporate your chocolate chip.
Make the Cheesecake Filling
In a small bowl, mix creamy cream cheese softened together with vanilla extract and sugar until it is smooth and soft.
Assemble the Cookies
Scoop out small balls of dough for cookies (about 2 tablespoons for each). Then, flatten the balls slightly and form a small well at the center.
Pour approximately 1 teaspoon of cheesecake filling to the well. Cover the well with a second chunk of the cookie dough, and cover the edges with a seal to keep your filling in a complete way.
Bake the Cookies
Place the cookies in a single layer on the baking pans, leaving enough space for spreading. Bake for 15 to 18 minutes or until edges are golden brown.
Cookies should rest on their baking sheets for about 5 mins before moving them onto an air-tight rack to completely cool.
