Cheesecake Stuffed Chocolate Chip Cookies

Ingredients
  

  • For the Cookie Dough :
  • 2 cups of all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter melted
  • 1 cup of packed brown sugar
  • 1/2 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg
  • 1 egg yolk
  • 2 cups chocolate chips
  • For the Cheesecake Filling :
  • 8 oz cream cheese softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the Oven
  • Preheat your oven to 325degF (165degC). Place baking sheets on parchment paper.
  • Prepare the Cookie Dough
  • Mix the baking soda, flour, along with salt into a large bowl.
  • Separately in a bowl, beat the butter that has been melted along with brown sugar and granulated sugar until the mixture is smooth.
  • Mix with the vanilla, egg the egg yolk and vanilla until it is light and creamy. Gradually add your dry ingredients, mixing until all of them are.
  • Incorporate your chocolate chip.
  • Make the Cheesecake Filling
  • In a small bowl, mix creamy cream cheese softened together with vanilla extract and sugar until it is smooth and soft.
  • Assemble the Cookies
  • Scoop out small balls of dough for cookies (about 2 tablespoons for each). Then, flatten the balls slightly and form a small well at the center.
  • Pour approximately 1 teaspoon of cheesecake filling to the well. Cover the well with a second chunk of the cookie dough, and cover the edges with a seal to keep your filling in a complete way.
  • Bake the Cookies
  • Place the cookies in a single layer on the baking pans, leaving enough space for spreading. Bake for 15 to 18 minutes or until edges are golden brown.
  • Cookies should rest on their baking sheets for about 5 mins before moving them onto an air-tight rack to completely cool.
