Ingredients
For the Meatloaf:

½ medium shallot, finely chopped
1 tablespoon unsalted butter
2 large eggs
¾ cup whole milk
¾ cup Italian-style breadcrumbs or seasoned breadcrumbs
2 pounds lean ground beef
1 tablespoon tomato ketchup or chili sauce
1 teaspoon dried Italian seasoning
2 tablespoons chopped fresh parsley (or 2 teaspoons dried parsley)
1 teaspoon kosher salt (to taste)
½ teaspoon black pepper
For the Meatloaf Sauce:

½ cup chili sauce
½ cup ketchup
2 tablespoons brown sugar (optional)
Instructions
Precise the oven to 180°C. Line a rimmed baking pan with aluminum foil and spritz with cooking spray.
Sauté the shallot in butter over medium-low heat until tender; let it cool completely.
In a medium bowl, whisk together eggs, milk, and breadcrumbs; let it sit for 5-10 minutes.
Add ground beef, cooled shallot, tomato ketchup or chili sauce, Italian seasoning, parsley, salt, and pepper; mix until just combined.
Form an 8″x4″ loaf on the baking pan and bake for 40 minutes.
Mix chili sauce and ketchup (add brown sugar if using). Spread over the meatloaf and bake for an additional 10-15 minutes until the internal temperature reaches 71°C. Broil for 1-2 minutes if desired.
Allow the meatloaf to rest for 10 minutes before slicing and serving.
