Crispy Chicken Pot Pie Noodles Recipe ππ₯

Ingredients:
12 oz noodles (penne or fusilli work well)
2 tablespoons olive oil
1 onion, diced
2 carrots, diced
2 stalks celery, diced
3 cloves garlic, minced
2 cups cooked chicken, shredded
1 cup frozen peas
3 cups chicken stock
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
1/4 cup grated mozzarella cheese (optional)
Fresh basil for garnish
Directions:
Prepare the noodles according to package instructions. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add onion, carrots, and celery, and sautΓ© until tender, about 8-10 minutes. Add garlic and cook for another minute.
