INGREDIENTS  

  • 8 cups chicken broth
  • 2 skinless, boneless chicken breasts
  • 1 onion, diced
  • 2 carrots, cut
  • 2 celery stalks cut into slices
  • 2 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 teaspoon of dried parsley
  • Salt and pepper as desired
  • 2 cups of uncooked egg noodles
  • Fresh chopped parsley can be used as garnish (optional)

INSTRUCTIONS 

  • In a large saucepan, bring the chicken broth to a boil over moderate heat.
  • Add the skinless, boneless chicken breasts to the pot and cook for 15 to 20 minutes until the chicken is cooked and soft.
  • Remove the cooked chicken breasts from the pan and shred them with two forks. Set aside.
  • In the same pan, mix the chopped onions, sliced carrots, chopped celery, crushed garlic, dried thyme, and dried parsley. Sprinkle with salt and pepper as desired.
  • The mixture of vegetables should be simmered for approximately 10 minutes or until the vegetables are soft.
  • Add the chicken that has been shredded back to the pot, and then add the egg noodles that are not cooked. Continue to simmer for 8-10 minutes until noodles are at a moderate temperature.
  • Taste the soup, then alter the seasoning by adding salt and pepper as necessary.
  • Ladle the classic chicken noodle soup into bowls of soup, and garnish with fresh chopped parsley if you wish.
