Retro Beef Stroganoff served with Classic Egg Noodles 🍝🥩

Ingredients:

For the Beef Stroganoff:

1 lb beef tenderloin, thinly sliced
2 tbsp extra-virgin olive oil
1 medium shallot, finely chopped
2 cloves garlic, minced
8 oz mushrooms, sliced
1 tsp smoked paprika
2 tbsp all-purpose flour
1 cup beef stock
1 cup crème fraîche
1 tbsp whole-grain mustard
Salt and pepper to taste
Fresh chives, chopped (for garnish)
For the Egg Noodles:

12 oz egg noodles
Salt (for pasta water)
Instructions:

Cook the Egg Noodles:

Start by boiling salted water in a large pot. Once boiling, add the egg noodles and cook them according to the package instructions until they reach the al dente texture. After cooking, drain the noodles and set them aside.
Prepare the Beef Stroganoff:

In a large skillet, warm the olive oil over medium-high heat. Add the sliced beef and cook it for about 2-3 minutes until it is nicely browned. Once browned, remove the beef from the skillet and keep it aside.
In the same skillet, add the finely chopped shallot and cook until it becomes soft, which should take about 3-4 minutes. Next, stir in the minced garlic and sliced mushrooms, continuing to cook until the mushrooms are tender and browned.
Sprinkle smoked paprika and flour over the mushroom mixture, stirring to combine thoroughly. Allow this mixture to cook for an additional minute to eliminate any raw flour taste.
Gradually pour in the beef stock, stirring constantly until the sauce thickens. Reduce the heat to a simmer, then mix in the crème fraîche and whole-grain mustard until everything is well blended. Return the beef to the skillet, cooking for an additional 2-3 minutes until everything is heated through. Adjust the seasoning with salt and pepper according to your taste.
Serve:

To serve, place a generous portion of the cooked egg noodles on each plate, and then top with the rich beef stroganoff mixture. Finish off by garnishing with chopped chives.
