Crockpot Cowboy Soup

Cowboy’s Delight Soup 🍲🤠

Here’s what you’ll need:

1 pound ground beef
1 medium onion, finely chopped
1 can of crushed tomatoes (14.5 oz)
1 can of tomato puree (8 oz)
1 can of whole kernel corn (15 oz), drained
1 can of pinto beans (15 oz), drained
1 can of kidney beans (15 oz), drained
4 cups of beef broth
1 packet of taco seasoning
1 cup of diced potatoes
Salt and pepper to taste
Instructions:

Get started by browning the ground beef and onion in a skillet over medium heat, then drain off the excess fat once the beef is fully cooked.

Next, transfer the cooked beef and onion mixture to the crockpot.

Now, add the remaining ingredients to the crockpot, stirring in the crushed tomatoes, tomato puree, corn, pinto beans, kidney beans, beef broth, taco seasoning, and diced potatoes.

Cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the soup has thickened slightly.

Finally, season with salt and pepper to taste, and serve hot.
