A Hearty Hobo Casserole 🍲

Ingredients:

1 pound ground beef
1 medium onion, finely chopped
2 cloves garlic, minced
1 can (15 oz) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 cup shredded cheddar cheese
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and pepper to taste
1 cup cooked rice (optional, for added bulk)
For the Topping:

2 cups frozen tater tots or hash browns
1/2 cup shredded cheddar cheese
Directions:

Prepare the Meat Mixture:

Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground beef over medium heat until browned, breaking it up into small pieces as it cooks. Drain excess fat if needed.
Add the finely chopped onion and minced garlic to the skillet with the beef. Cook until the onion is translucent.
Stir in the diced tomatoes, kidney beans, corn, shredded cheddar cheese, smoked paprika, cumin, salt, and pepper. Mix well and let it simmer for about 5 minutes.
Assemble the Casserole:

If using rice, stir it into the meat mixture. Transfer the mixture to a greased 9×13-inch baking dish.
Arrange the frozen tater tots or hash browns evenly over the top of the meat mixture.
Bake:

Bake in the preheated oven for 25-30 minutes, or until the tater tots or hash browns are crispy and golden brown.
Sprinkle the additional 1/2 cup of shredded cheddar cheese over the top and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Serve:

Allow the casserole to cool for a few minutes before serving. Enjoy it hot!
