EQUIPMENT
- Mixing bowls
- Pastry blender, food processor
- – Wrapping plastic
- Rolling Pin
- 9-inch pie dish
- Pastry brush
INGREDIENTS
- – 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon of sugar granulated
- 1 cup butter that is unsalted chilled, cut into cubes of small size
- – 1/2 cup of ice water
Filling the form:
- 6- Six huge Granny Smith apples, peeled, cored, and then thinly cut into slices
- 3/4 cup of granulated sugar
- 3/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon crushed cloves
- 2 tablespoons all-purpose flour
- 1 tablespoon of lemon juice
- 1 tablespoon butter that is unsalted cut into small pieces
For assembly:
- 1 egg, whisked (for eggs to wash)
- Sugar Granulated (for sprinkles)
INSTRUCTIONS
- In a large mixing bowl mix all the ingredients: flour, salt and granulated sugar to make the crust. Add the cubed cold butter, and employ a pastry blender, or a food processor break in the flour mix until it is the consistency of fine crumb.
- Gradually add the ice by adding a spoon at a moment and mix until the dough begins to form. Divide the dough into two halves and form the half in a disc and wrap it in plastic wrap and chill for at least 1 hour.
- Preheat the oven until 425 degrees F (220degC).
- In a different mixing bowl, mix the apples cut into slices together with the granulated sugars cinnamon, brown sugar cloves, nutmeg, flour as well as lemon juice. Stir to coat the apples evenly.
- Make one disc from dough using a surface that is floured to form a circle big enough to fit into your pie dish. The dough should be carefully transferred onto the pie dish, press it lightly into dish’s bottom and sides.
- Scoop the apple mixture into the pie crust, placing it a little in the center. Sprinkle over the topping with tiny bits of butter.
- Make the second disc of dough and then place it on top of the filling. Cut off any dough that isn’t needed leaving an inch overhang. The overhang should be folded underneath the crust on the bottom and press the edges together to close. Cut a couple of slits through the top crust in order to let steam escape.
- The top crust should be brushed with the egg that you beat and sprinkle it with sugar granulated.
- The pie should be placed on the baking tray in order to collect any spills. Then bake in the oven for 45-50 minutes to ensure that the pie is cooked and golden, as well as the topping bubbly.
- Take the pie out of the oven and allow it to sit on the rack for a few minutes prior to cutting it and serving
