Ingredients
  

For the Filling

  • 6 medium-sized apples (like Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 1/2 cup brown sugar (or coconut sugar for a lower glycemic index)
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch (or arrowroot powder as a thickening agent)

For the Crisp Topping

  • 1 cup rolled oats (gluten-free if necessary)
  • 1/2 cup almond flour (or any nut flour)
  • 1/2 cup maple syrup (or agave nectar)
  • 1/4 cup coconut oil (melted)
  • 1/2 tsp salt
  • 1/2 cup chopped nuts (walnuts or pecans, optional) Optional for extra crunch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sliced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix until the apples are evenly coated.
  • Layer the apple mixture in a greased 9x13 inch baking dish.
  • In a separate bowl, combine rolled oats, almond flour, maple syrup, melted coconut oil, salt, and the optional chopped nuts. Stir until crumbly.

Baking

  • Evenly distribute the crisp topping over the apple filling.
  • Bake in the preheated oven for 30 minutes, or until the topping is golden brown and the apples are bubbling.
  • Allow the Vegan Apple Crisp to cool for at least 10 minutes before serving.

Notes

Serve warm with vegan ice cream or coconut whipped cream. Store leftovers in an airtight container in the fridge for up to 3-4 days or freeze for up to 3 months.
