Cooking Steps

  • Heat a large pot over medium heat. Add a splash of oil and cook the ground beef until browned, about 5-7 minutes.
  • Toss in the chopped onions, red bell pepper, and garlic. Stir occasionally, letting the veggies soften, about 5 minutes.
  • Sprinkle in the chili powder, cumin, and oregano, stirring to combine.
  • Pour in the crushed tomatoes and beef broth, stirring everything together. Let the mixture come to a gentle boil before reducing the heat.
  • Add the kidney beans (if using). Simmer for 20 minutes, allowing the flavors to meld beautifully.
  • Serve hot, garnished with fresh cilantro or cheese if you please.

Notes

Leftovers can be stored in an airtight container in the fridge for up to five days. Freeze for up to three months. To enhance flavors, prepare the chili a day ahead.
