Ingredients
  

Pasta and Base

  • 8 oz Pasta (your choice of spaghetti, penne, or fusilli) Gluten-free options work beautifully too!
  • 2 cups Cherry Tomatoes Sweet and juicy.
  • 3 cloves Garlic Minced.
  • 2 tbsp Olive Oil Extra virgin recommended for added flavor.

Cheese and Herbs

  • 4 oz Goat Cheese Creamy and tangy; can substitute with feta.
  • 1/4 cup Fresh Basil Chopped.
  • to taste Salt and Pepper Essentials for rounding out flavors.

Instructions
 

Cooking the Pasta

  • Boil a large pot of salted water. Add your pasta and cook according to package instructions until al dente. Remember to reserve 1/2 cup of pasta water before draining.

Sautéing

  • While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Toss in the cherry tomatoes and cook for 5-7 minutes, stirring occasionally until they soften and begin to burst.

Combining Ingredients

  • Add the drained pasta directly into the skillet with the tomatoes, along with your reserved pasta water. Mix well to combine.
  • Crumble in the goat cheese and sprinkle in the fresh basil. Gently toss to create a creamy sauce, allowing the cheese to melt and coat every strand of pasta.
  • Season with salt and pepper to taste.

Serving

  • Divide among plates, garnish with extra basil if desired, and enjoy!

Notes

Add sautéed zucchini or bell peppers for a veggie boost. Grilled chicken or shrimp can be good additions for a heartier meal.
