Street Corn Pasta Salad

A delicious twist on street corn, this pasta salad is packed with roasted corn, creamy dressing, and tangy cotija cheese. Perfect for BBQs, potlucks, or as a side dish!

Ingredients
  

  • 400 g pasta rotini or any pasta of your choice
  • 2 roasted corn cobs
  • 3 green onions thinly sliced
  • 1 shallot finely minced
  • 2 jalapeƱos minced
  • 1/2 cup fresh cilantro chopped
  • 1 cup cotija cheese crumbled
  • 1 cup sour cream
  • 1/2 cup mayo
  • 3 cloves garlic minced
  • Juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions
 

  • Roast the corn and cook the pasta.
  • Mix together the dressing ingredients and toss with the pasta.
  • Combine the pasta with roasted corn, veggies, and cotija cheese.
  • Garnish with fresh cilantro and serve chilled.
