Street Corn Pasta Salad
A delicious twist on street corn, this pasta salad is packed with roasted corn, creamy dressing, and tangy cotija cheese. Perfect for BBQs, potlucks, or as a side dish!
- 400 g pasta rotini or any pasta of your choice
- 2 roasted corn cobs
- 3 green onions thinly sliced
- 1 shallot finely minced
- 2 jalapeƱos minced
- 1/2 cup fresh cilantro chopped
- 1 cup cotija cheese crumbled
- 1 cup sour cream
- 1/2 cup mayo
- 3 cloves garlic minced
- Juice and zest of 1 lime
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt and pepper to taste
Roast the corn and cook the pasta.
Mix together the dressing ingredients and toss with the pasta.
Combine the pasta with roasted corn, veggies, and cotija cheese.
Garnish with fresh cilantro and serve chilled.
