Ingredients

  • 2 to 3 pounds chicken breasts or thighs Use boneless for easier shredding
  • 1 jar salsa Mild or medium based on preference
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 packet taco seasoning or 2 to 3 tablespoons homemade
  • 1 diced onion Optional
  • 1 bell pepper Optional

Instructions
 

Preparation

  • Add chicken to the crock pot, then pour salsa over it.
  • Sprinkle taco seasoning on top. Add onion and pepper if using.
  • Cook on low for 6 to 7 hours or high for 3 to 4 hours.
  • Shred the chicken right in the pot with two forks.
  • Stir in beans and corn, then cook for an additional 15 minutes to warm through.

Notes

Serving ideas include rice bowls, tacos, nachos, or even atop a baked potato. To thicken the sauce, crack the lid for the last 20 minutes to allow steam to escape.
