rotel deip recipe

Ingredients
  

  • 1 lb. 85% lean ground beef (or substitute with pork sausage for a different flavor)
  • 1 10-oz. can Rotel tomatoes (do not drain)
  • 1 16-oz. package Velveeta cheese, cubed
  • 1/2 tsp. chili powder optional, for extra kick
  • Chopped fresh cilantro and tortilla chips for serving

Instructions
 

  • Cook the Meat: In a medium pot or saucepan over medium-high heat, cook the ground beef (or pork sausage), stirring often, until browned, about 5 minutes. Drain the fat, leaving the meat in the pot.
  • Combine Ingredients: Reduce the heat to medium, then add the Rotel tomatoes (including their juices) and cubed Velveeta cheese to the pot. Stir frequently until the cheese is fully melted, about 5 minutes. If desired, mix in the chili powder for added spice.
  • Serve: Transfer the dip to a serving bowl or keep it warm in the skillet. Garnish with chopped cilantro if you like, and serve with tortilla chips for dipping.
