Ingredients
  

Main Ingredients

  • 1 pound chicken breast, thinly sliced can substitute with tofu or shrimp
  • 1 cup fresh pineapple, diced canned pineapple in juice works too
  • 1 each bell pepper, sliced preferably red or yellow for sweetness
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, freshly grated adds an aromatic zing

Sauce and Oils

  • 3 tablespoons soy sauce low sodium is recommended
  • 1 tablespoon sesame oil for depth of flavor
  • 1 tablespoon cornstarch for thickening the sauce
  • 2 tablespoons vegetable oil coconut oil can be used for a tropical essence

Seasoning

  • to taste salt and pepper

For Serving

  • to taste cooked rice or noodles for serving

Instructions
 

Preparation

  • Gather and slice all your ingredients beforehand. Cut chicken into thin strips to help it cook evenly.

Marinate the Chicken

  • In a bowl, combine chicken with 1 tablespoon of soy sauce and cornstarch. Let it marinate for about 10 minutes while you prepare the vegetables.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the marinated chicken to the skillet, spreading it out so it cooks evenly. Sauté for 6-7 minutes or until golden brown and cooked through.
  • Once the chicken is cooked, add minced garlic and grated ginger to the skillet. Cook for an additional minute until aromatic.
  • Add bell pepper, broccoli, and pineapple to the skillet. Stir everything together and cook for another 3-4 minutes until the vegetables are tender-crisp.
  • Lower the heat, add the remaining soy sauce and sesame oil, stirring well to combine. Cook for another 2 minutes to let the flavors meld.

Serving

  • Serve your delectable pineapple chicken stir-fry hot over a bed of rice or noodles. Enjoy!

Notes

For a healthier option, use boneless, skinless chicken thighs, opt for brown rice, or add leafy greens. Store leftovers in an airtight container for up to 3 days.
