Cook the Chicken
In a big pan at medium-high temperature. Add the chicken pieces, sprinkle with salt and black pepper and cook for 5-7 mins until they are browned and cooked.
Saute Aromatics
Add minced ginger and garlic into the chicken. Stir for approximately 1 minute or so until the garlic is fragrant.
Add Vegetables and Pineapple
Then add the chopped bell peppers as well as chunks of pineapple in the skillet. Cook for 3 to 5 minutes, to ensure that the bell peppers are soft and the pineapple has warmed.
Incorporate the Rice and Sauce
Add the rice cooked as well as soy sauce blending all ingredients thoroughly. Cook for 2 to 3 minutes, till the rice has cooked and coated in the sauce.
Serve
Add chopped green onions, and serve hot from the skillet.
