Pineapple Chicken and Rice

Ingredients
  

  • 1 1 lb skinless boneless chicken breasts or thighs, chopped into pieces bite-sized
  • 1 cup pineapple chunks fresh or canned, drained
  • 1 cup bell pepper diced
  • 1 cup cooked rice
  • 1/4 cup soy sauce
  • 2 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp ginger minced
  • Salt pepper and according to your taste
  • Green onions sliced (for garnish)

Instructions
 

  • Cook the Chicken
  • In a big pan at medium-high temperature. Add the chicken pieces, sprinkle with salt and black pepper and cook for 5-7 mins until they are browned and cooked.
  • Saute Aromatics
  • Add minced ginger and garlic into the chicken. Stir for approximately 1 minute or so until the garlic is fragrant.
  • Add Vegetables and Pineapple
  • Then add the chopped bell peppers as well as chunks of pineapple in the skillet. Cook for 3 to 5 minutes, to ensure that the bell peppers are soft and the pineapple has warmed.
  • Incorporate the Rice and Sauce
  • Add the rice cooked as well as soy sauce blending all ingredients thoroughly. Cook for 2 to 3 minutes, till the rice has cooked and coated in the sauce.
  • Serve
  • Add chopped green onions, and serve hot from the skillet.
