Mediterranean Chicken Bake

Boneless chicken breasts baked with zucchini, cherry tomatoes, roasted red peppers, olives, and topped with mozzarella and feta cheeses, all seasoned with Mediterranean herbs.

Ingredients
  

  • 1 lb chicken breast boneless and skinless
  • 2 Tbsp olive oil divided
  • 2 tsp garlic powder
  • 1 tsp dried oregano
  • 1 zucchini thinly sliced
  • 1/2 cup cherry tomatoes cut in half
  • 1/2 medium yellow onion diced
  • 1/3 cup Kalamata olives pitted
  • 1/2 cup jarred roasted red peppers thinly sliced
  • 1/2 cup mozzarella grated
  • 1/2 cup feta crumbled
  • 1 Tbsp fresh parsley for garnish
  • Kosher salt and fresh ground pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Slice the chicken breasts horizontally and season with olive oil, garlic powder, oregano, kosher salt, and pepper.
  • Transfer the chicken to a 9 x 13-inch baking dish. Top with zucchini, cherry tomatoes, onions, roasted red peppers, and Kalamata olives. Drizzle with remaining olive oil and season with salt and pepper.
  • Top with crumbled feta and grated mozzarella.
  • Bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Broil for 2-3 minutes to brown the cheese, if desired.
  • Rest for 5-10 minutes, garnish with fresh parsley, and serve.
