  • 1 medium red bell pepper, chopped Feel free to use green or yellow peppers!
  • 1 can (14 oz) diced tomatoes Fire-roasted tomatoes add extra flavor; fresh tomatoes can be used if in season.
  • 1 cup vegetable broth Chicken broth can be used for non-vegetarians.
  • 2 tsp smoked paprika Regular paprika can work in a pinch.
  • 1 tsp cumin Coriander can be a suitable swap.
  • to taste none salt and pepper Essential for flavor balance.
  • 1/4 cup fresh parsley, chopped For garnish, provides freshness.

Preparation

  • Heat a tablespoon of olive oil in a large skillet over medium heat.
  • Add the diced onions and sauté until soft and translucent, about 5 minutes.
  • Incorporate minced garlic and chopped red bell pepper; stir for 2-3 minutes.
  • Introduce drained chickpeas, smoked paprika, cumin, salt, and pepper; stir well.
  • Add diced tomatoes and vegetable broth; bring to a gentle simmer and cook for 10 minutes.
  • Once chickpeas are soft, remove from heat and garnish with fresh parsley before serving.

Notes

Leftover Marry Me Chickpeas can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 2 months. Reheat gently on the stovetop, adding a splash of water if needed. Avoid overcooking chickpeas and always taste as you go for optimal seasoning. You can enhance the dish with substitutions like lentils, homemade broth, or quinoa.
