Mango Coconut Chia Pudding
A creamy no-cook pudding of chia seeds, coconut & almond milk, layered with fresh mango puree.
- 1 cup coconut milk
- 1 cup almond milk
- ⅓ cup chia seeds
- ⅓ cup unsweetened shredded coconut
- 2 Tbsp maple syrup
- Mango Puree: 2 cups mango 2 Tbsp maple syrup
Whisk coconut milk, almond milk, chia seeds, coconut, and 2 Tbsp maple syrup. Chill 2+ hours.
Puree mango and 2 Tbsp syrup until smooth; chill.
Layer pudding and mango puree in glasses. Top as desired.
