Mango Coconut Chia Pudding

A creamy no-cook pudding of chia seeds, coconut & almond milk, layered with fresh mango puree.

Ingredients
  

  • 1 cup coconut milk
  • 1 cup almond milk
  • cup chia seeds
  • cup unsweetened shredded coconut
  • 2 Tbsp maple syrup
  • Mango Puree: 2 cups mango 2 Tbsp maple syrup

Instructions
 

  • Whisk coconut milk, almond milk, chia seeds, coconut, and 2 Tbsp maple syrup. Chill 2+ hours.
  • Puree mango and 2 Tbsp syrup until smooth; chill.
  • Layer pudding and mango puree in glasses. Top as desired.
