Ingredients
  

For the Meatballs

  • 1 lb Ground beef or turkey Can be swapped for plant-based alternatives.
  • 1/2 cup Breadcrumbs Use whole wheat or gluten-free, as needed.
  • 1/4 cup Grated Parmesan cheese Enhances the flavor of meatballs.
  • 2 tbsp Parsley, finely chopped Can substitute with basil.
  • 3 cloves Garlic, minced Adds aroma to the broth.
  • 1 tsp Italian seasoning A blend of herbs.
  • to taste Salt and pepper Essential for flavor.

For the Soup

  • 6 cups Chicken or vegetable broth Homemade will add deeper flavor.
  • 1 can Diced tomatoes Adds sweetness and acidity.
  • 1 cup Carrots, chopped Classic soup staple.
  • 1 cup Celery, chopped Classic soup staple.

Instructions
 

Preparation

  • In a bowl, combine the ground beef, breadcrumbs, Parmesan cheese, chopped parsley, minced garlic, Italian seasoning, salt, and pepper. Mix gently until all ingredients are combined but be careful not to overwork the meat.
  • Roll the mixture into small, golf-ball-sized meatballs, about an inch in diameter. Set aside on a plate.

Cooking

  • In a large pot over medium heat, add a drizzle of olive oil. Once hot, toss in chopped carrots and celery. Cook for about 5 minutes until they are slightly tender and fragrant, stirring occasionally.
  • Pour in the chicken or vegetable broth and add the canned diced tomatoes. Stir to combine, bringing the mixture to a gentle boil.
  • Carefully drop the meatballs into the broth. Reduce the heat to low, cover, and let simmer for 15 minutes, allowing the flavors to meld and the meatballs to cook through.
  • Taste and adjust salt and pepper as needed. If desired, stir in an additional sprinkle of fresh parsley just before serving.
  • Ladle the soup into bowls, and feel free to top with extra Parmesan cheese.

Notes

For added nutrients, consider adding spinach or kale before serving. This soup stores well in the fridge for up to 3 days or can be frozen for 3 months.
