  • 1 30-ounce bag frozen hash brown potatoes Use frozen for best texture.
  • 2 cups cooked ham, diced Consider turkey ham for a leaner option.
  • 2 cups shredded cheddar cheese Mozzarella can be used for a milder flavor.
  • 1 cup sour cream Greek yogurt serves as a great substitute.
  • 1 can (10.5 ounces) cream of chicken soup Mushroom soup works well for a twist.
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste Don’t skip on seasoning!
  • 1 cup frozen mixed vegetables Optional for added color and nutrients.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the frozen hash browns, diced ham, shredded cheese, sour cream, cream of chicken soup, chopped onion, garlic powder, and onion powder. Stir until all ingredients are well coated.
  • Add salt and pepper to taste. Feel free to add herbs like thyme or paprika.
  • Pour the mixture into a greased 9x13 casserole dish, spread it evenly, and press down gently.

Baking

  • Bake in the preheated oven for 1 hour or until the top is golden and bubbly. Cover with foil for the first 30 minutes if a softer texture is preferred.

Serving

  • Let the casserole cool for at least 10 minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat in the oven at 350°F.
