Ground Turkey and Peppers

A quick and healthy one-pan meal with ground turkey, bell peppers, onions, and chipotle seasoning.

Ingredients
  

  • 3 to 4 tablespoons extra virgin olive oil
  • 1 cup chopped yellow onion
  • Some chopped greens from green onions optional
  • 1 bell pepper chopped (red or yellow preferred)
  • 2 cloves garlic minced
  • Kosher salt to taste
  • 1 pound ground turkey preferably ground turkey thighs
  • 1 teaspoon chipotle powder or chili powder or to taste
  • 2 tablespoons chopped fresh parsley or cilantro

Instructions
 

  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sauté chopped onion and bell pepper until softened. Add minced garlic and cook for 30 seconds.
  • Push veggies to the side of the pan. Add 1 or 2 more tablespoons of oil to the empty side. Add ground turkey, salt, and chipotle powder. Cook, stirring occasionally, until the turkey is browned.
  • Once turkey is cooked through, stir in the sautéed veggies. Adjust seasoning with salt and chili powder to taste.
  • Stir in chopped parsley or cilantro and remove from heat.
  • Serve alone, or with steamed rice or noodles.
