Ground Turkey and Peppers
A quick and healthy one-pan meal with ground turkey, bell peppers, onions, and chipotle seasoning.

Ingredients

extra virgin olive oil

cup
chopped yellow onion
Some chopped greens from green onions
optional

bell pepper
chopped (red or yellow preferred)
2
cloves
garlic
minced
Kosher salt
to taste

pound
ground turkey
preferably ground turkey thighs
1
teaspoon
chipotle powder or chili powder
or to taste

tablespoons
chopped fresh parsley or cilantro
Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sauté chopped onion and bell pepper until softened. Add minced garlic and cook for 30 seconds.
Push veggies to the side of the pan. Add 1 or 2 more tablespoons of oil to the empty side. Add ground turkey, salt, and chipotle powder. Cook, stirring occasionally, until the turkey is browned.
Once turkey is cooked through, stir in the sautéed veggies. Adjust seasoning with salt and chili powder to taste.
Stir in chopped parsley or cilantro and remove from heat.
Serve alone, or with steamed rice or noodles.
