Ground Beef and Sweet Potato Skillet

A healthy, one-pan meal featuring ground beef, sweet potatoes, carrots, and brussels sprouts, all seasoned with chili powder and ginger.

Ingredients
  

  • 1 pound lean ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon dried basil
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1 teaspoon minced garlic
  • 2 tablespoons olive or avocado oil
  • 2 cups carrots peeled and diced
  • 2 cups sweet potatoes peeled and diced
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper
  • 1 cup beef stock or broth
  • 1 pound brussels sprouts diced

Instructions
 

  • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add ground beef and cook until browned. Season with salt, pepper, chili powder, basil, and garlic.
  • Add another tablespoon of oil and cook the diced sweet potatoes and carrots with seasoning for 5-10 minutes, until browned.
  • Add beef back to the skillet, along with beef stock and brussels sprouts. Cover and simmer for 5-8 minutes until vegetables are tender.
  • Serve alone or with rice or noodles.
