Garlic Parmesan Chicken Pasta

A creamy, cheesy chicken pasta with a rich garlic Parmesan sauce, topped with fresh spinach.

Ingredients
  

  • 3 thin-sliced chicken breasts
  • 1 teaspoon salt divided
  • 1/2 teaspoon black pepper divided
  • 1 teaspoon Italian seasoning
  • 2 tablespoons unsalted butter divided
  • 4 garlic cloves minced
  • 1 tablespoon lemon juice
  • 2 tablespoons flour cornstarch, or arrowroot powder
  • 1 can full-fat coconut milk or 1 1/2 cups heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4-1/2 teaspoon red pepper flakes optional
  • 1 16-ounce package penne pasta
  • 1/2 cup finely grated Parmesan cheese
  • 5 ounces baby spinach

Instructions
 

  • Cook pasta according to package directions and set aside.
  • Season chicken with salt, pepper, and Italian seasoning.
  • Cook chicken in butter until browned on both sides and fully cooked. Slice and set aside.
  • Add garlic, lemon juice, and flour to the same pan, then whisk in coconut milk (or cream) and simmer until thickened.
  • Stir in salt, pepper, Parmesan, and spinach.
  • Toss pasta in the sauce, then top with sliced chicken. Serve hot with extra Parmesan
