Heat a large skillet over medium heat. Add olive oil and two tablespoons of ghee.
Add potatoes to the pan, season with garlic, thyme, oregano, salt, and pepper, and cook until golden and tender, about 8-10 minutes. Remove and set aside.
Increase heat to medium-high, add the remaining ghee, and sear steak for 2-3 minutes. Stir and cook for an additional 1-2 minutes.
Add potatoes back to the pan, stir to combine, and season to taste. Garnish with parsley and serve.
