Garlic Butter Steak Bites and Potatoes

A rich, savory one-pan meal with golden potatoes, juicy steak, and garlic butter sauce.

Ingredients
  

  • 1/4 cup ghee or butter divided
  • 1 tablespoon olive oil
  • 1 lb Yukon Gold potatoes cut into 1/2-inch cubes
  • 3 garlic cloves minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon sea salt plus more to taste
  • 1/4 teaspoon ground black pepper plus more to taste
  • 1 1/4 lb sirloin steak cut into 1/2-inch cubes
  • Freshly chopped parsley for garnish

Instructions
 

  • Heat a large skillet over medium heat. Add olive oil and two tablespoons of ghee.
  • Add potatoes to the pan, season with garlic, thyme, oregano, salt, and pepper, and cook until golden and tender, about 8-10 minutes. Remove and set aside.
  • Increase heat to medium-high, add the remaining ghee, and sear steak for 2-3 minutes. Stir and cook for an additional 1-2 minutes.
  • Add potatoes back to the pan, stir to combine, and season to taste. Garnish with parsley and serve.
