Garlic Butter Chicken Bites with Creamy Parmesan Pasta

Ingredients
  

  • For the Chicken Bites:
  • 1 lb boneless chicken breasts cut into bite-sized pieces
  • 4 tbsp butter divided
  • 4 cloves garlic minced
  • Salt and pepper to taste
  • For the Creamy Parmesan Pasta:
  • 8 oz pasta e.g., fettuccine or penne
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Cook the Pasta:
  • Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the Chicken Bites:
  • In a large skillet over medium heat, melt 2 tbsp of butter. Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the chicken bites to the skillet, season with salt and pepper, and cook for about 5-7 minutes, or until the chicken is golden brown and cooked through.
  • Tip: Avoid overcrowding the skillet to ensure the chicken browns nicely.
  • Make the Creamy Parmesan Sauce:
  • In a separate pot, combine the heavy cream, Parmesan cheese, Italian seasoning, and the remaining 2 tbsp of butter. Heat over low, stirring occasionally until the cheese melts and the sauce thickens slightly.
  • Combine Pasta and Sauce:
  • Add the cooked pasta to the creamy Parmesan sauce, tossing until the pasta is well-coated.
  • Serve:
  • Plate the pasta and top with the garlic butter chicken bites. Garnish with fresh parsley for added flavor and color.
