Frito Corn Salad

A colorful, creamy, and crunchy salad made with sweet corn, black beans, bell peppers, and a tangy mayo dressing, topped with Chili Cheese Fritos for the perfect crunch.

Ingredients
  

  • For the Salad:
  • 1 15- ounce can sweet corn drained
  • 1 15- ounce can black beans drained and rinsed
  • 2 cups mini sweet bell peppers diced
  • 3 scallions just the green part, chopped
  • 1/2 cup cilantro roughly chopped
  • 1/2-3/4 cup low-fat mayo
  • 1 cup reduced-fat shredded cheddar cheese
  • 1/2 9- ounce bag of Chili Cheese Fritos

Instructions
 

  • In a medium bowl, combine corn, black beans, bell peppers, scallions, and cilantro. Stir to combine.
  • Add mayo and shredded cheddar cheese, and mix well. Taste and adjust seasoning with salt and pepper.
  • Cover and chill for at least 30 minutes.
  • Before serving, stir in half of the Chili Cheese Fritos.
  • Serve immediately and enjoy!
