Ingredients
  

Main ingredients

  • 1 pound Ground beef Can substitute with ground turkey
  • 1 small Onion, diced
  • 2 cloves Garlic, minced
  • 1 packet Taco seasoning Or 2 to 3 tablespoons homemade mix
  • 1 cup Salsa or canned diced tomatoes
  • 1 can Black beans, drained Optional
  • 1 cup Frozen corn Optional
  • 2 cups Cooked rice Or 1 cup dry rice plus water
  • as much as you like Shredded cheddar or a Mexican blend

Instructions
 

Preparation

  • Brown the ground beef with the diced onion in a large skillet.
  • Stir in the minced garlic and taco seasoning.
  • Add the salsa, black beans, and frozen corn, and let the mixture simmer for a few minutes to thicken.
  • If using pre-cooked rice, stir it in to warm through. If using dry rice, add the rice and the corresponding amount of water, cover, and let it cook until tender.
  • Turn off the heat, top with shredded cheese, and cover for one minute to melt the cheese.

Notes

For extra crunch, top with crushed tortilla chips and a spoon of sour cream. This recipe is flexible; feel free to skip or replace ingredients based on what you have.
