Ingredients

Dry Ingredients

  • 1.25 cups All-purpose flour Gives structure. Spoon it into the measuring cup so you do not pack in too much.
  • 2 tablespoons Sugar For flavor and browning; will not make them overly sweet.
  • 1 tablespoon Baking powder The main lift; fresh baking powder is important.
  • 0.5 teaspoon Salt Enhances overall flavor.

Wet Ingredients

  • 1 cup Milk Any type, including plant milk, adds moisture.
  • 1 large Egg Helps bind the mixture and adds tenderness.
  • 3 tablespoons Melted butter or neutral oil Adds richness and keeps the texture soft.
  • 1 teaspoon Vanilla extract Optional, but enhances the aroma.

Instructions

Preparation

  • In a large bowl, whisk together the dry ingredients.
  • In a separate bowl or large measuring cup, whisk the wet ingredients.
  • Pour the wet mixture into the dry ingredients and gently stir until most of the flour is incorporated.
  • Let the batter rest for about 5 minutes while heating the pan.

Cooking

  • Cook pancakes on a lightly buttered skillet, flipping when bubbles pop on the surface and edges look set.
  • Use medium heat to avoid burning the outside while ensuring the inside cooks through.

Notes

These pancakes can be frozen for later use. Cool completely before freezing to avoid sogginess. Store in a single layer on a baking sheet for 30 minutes before placing in a freezer bag.
