  • 2 pounds Potatoes, peeled or unpeeled Russets are ideal for a thicker soup.
  • 1 small Onion, diced Or half a large onion.
  • 2-3 cloves Garlic, minced Or a good spoonful of garlic paste.
  • 4 cups Chicken broth Or vegetable broth if preferred.
  • 1 cup Milk or half and half Adjust based on preference for creaminess.
  • 8 ounces Cream cheese For thickness and silky texture.
  • 3-4 slices Bacon, optional For smoky flavor, can substitute with turkey bacon.

Preparation

  • In a big pot, cook chopped bacon until crisp. Scoop it out and set it aside, leaving some fat in the pot for flavor.
  • Add diced onion to the pot and cook for about 3 to 5 minutes until soft. Add minced garlic and cook for 30 seconds, avoiding burning.
  • Toss in the chopped potatoes and cover with broth. Bring to a gentle boil and then reduce to a simmer.
  • Simmer for 15 to 20 minutes until potatoes are tender.
  • Turn off the heat and use a potato masher to mash part of the potatoes for thickness while keeping some chunks.
  • Turn heat back on low, add cream cheese in chunks, stirring until melted, then pour in milk or half and half slowly.
  • Taste and add salt and pepper to your liking. Stir in most of the bacon, reserving some for topping.

Notes

This soup is perfect for making ahead and reheating. It can also be frozen without the dairy added, then creaminess can be adjusted when reheating.
