Dump and Bake Chicken Tzatziki with Rice

A simple, one-pan meal that combines marinated chicken, tender rice, and creamy tzatziki sauce for a flavorful dinner with minimal effort.

Ingredients
  

  • For the Chicken:
  • 6-8 chicken breasts
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • For the Rice:
  • 1 1/2 cups long-grain white rice
  • 2 1/2 cups chicken broth
  • For the Tzatziki Sauce:
  • 1 cup tzatziki sauce
  • For Garnish:
  • Fresh herbs such as parsley or dill

Instructions
 

  • Marinate the Chicken: Coat chicken with the marinade and let it rest for 30 minutes.
  • Prepare the Rice: Cook rice with chicken broth in a baking dish.
  • Assemble and Bake: Place the marinated chicken on the rice and bake at 350°F for 35-40 minutes.
  • Add Tzatziki: After baking, drizzle tzatziki sauce over the chicken and rice.
  • Serve: Garnish with fresh herbs and serve.
