Ingredients

For the Chicken and Gravy

  • 1 pound boneless, skinless chicken breasts You can substitute with chicken thighs for a juicier option.
  • garlic powder, salt, and black pepper Season to your preference or add paprika for a smoky flavor.
  • 2 packets chicken gravy mix Use your favorite store-bought brand or make homemade chicken gravy.
  • 10.5 oz can cream of chicken soup For a lighter version, substitute with low-sodium or fat-free cream of chicken soup.
  • 2 cups water Replace with chicken broth for an added layer of flavor.

For the Toppings

  • ½ cup sour cream Greek yogurt is a great alternative for a tangy twist.
  • sliced green onions Adds a fresh pop of flavor to the final dish.

Instructions

Preparation

  • Pat the chicken breasts dry with a paper towel. Season both sides generously with garlic powder, salt, and black pepper.
  • For an extra flavor boost, marinate the chicken in the seasoning for 30 minutes before cooking.

Prepare the Gravy Mixture

  • In your slow cooker, whisk together the chicken gravy mix, cream of chicken soup, and water until smooth and well combined.
  • Substitute water with chicken broth for a deeper, richer gravy flavor.

Cook the Chicken

  • Place the seasoned chicken breasts into the slow cooker, ensuring they are fully submerged in the gravy mixture. Cover and cook on low heat for 6-8 hours.
  • If you’re short on time, you can cook on high for 3-4 hours, but cooking low and slow yields more tender chicken.

Shred the Chicken

  • Once the chicken is fully cooked and tender, use two forks to shred it into chunks directly in the slow cooker.
  • For a smoother texture, you can shred the chicken finely or leave it in larger pieces for more bite.

Add the Sour Cream

  • Stir in ½ cup of sour cream to create a rich and creamy gravy. Mix well until fully incorporated.

Serve

  • Serve the chicken and gravy over warm rice, creamy mashed potatoes, or even buttered noodles. Garnish with sliced green onions for a pop of color and flavor, if desired.

Notes

For best results, use fresh chicken. If you prefer a thicker gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the crock pot during the last 30 minutes of cooking.
