Preparation

  • Pat the pork chops dry with a paper towel and season both sides generously with salt and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and cook until golden brown on both sides, about 4-5 minutes per side. Remove the pork chops and set them aside.
  • In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn it.
  • Pour in the white wine, scraping up any brown bits from the bottom of the pan. Let it simmer for 2-3 minutes to reduce slightly.
  • Add the chicken broth, Dijon mustard, and heavy cream, stirring to combine. Allow the sauce to simmer for an additional 5 minutes until it thickens slightly.
  • Return the pork chops to the skillet, spooning the creamy sauce over them. Let them simmer together for about 5 minutes until the pork is cooked through.
  • Sprinkle fresh herbs over the top and serve the pork chops hot, basking in the creamy sauce.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm them in a skillet over low heat, adding a splash of chicken broth or cream.
