  • 1 tbsp Italian Seasoning Brings warmth and earthiness.
  • 2 cups Spinach Nutritious addition; can use kale or zucchini.
  • 1/2 cup Parmesan Cheese For serving; can use vegan cheese.

  • Boil a pot of water, season it, and cook the orzo until al dente according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, sear until golden brown (about 5–7 minutes each side). Remove and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant (around 30 seconds). Add diced tomatoes, broth, and Italian seasoning. Stir and simmer.
  • Stir in the cream cheese until melted and mixed well.
  • Slice the chicken and return it to the skillet. Add the cooked orzo and spinach, stirring until the spinach wilts and everything is coated.
  • Serve hot, sprinkling with freshly grated Parmesan cheese.

Notes

Feel free to customize the dish with different herbs and vegetables. Adjust consistency with added broth or milk if needed.
