Creamy Parmesan Chicken and Orzo

Ingredients
  

  • 1 lb chicken breast diced
  • Salt and Pepper to taste
  • 1 tbsp olive oil
  • 1 Tbsp butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup spinach optional
  • Fresh parsley to garnish

Instructions
 

  • Cook the Chicken
  • On a huge pan prepare butter and olive oil on moderate temperature.
  • Dice the Chicken by adding salt and black pepper, and then add it to the skillet. Cook for about 5-7 minutes, making sure to stir frequently until the chicken is golden brown and cooked. Remove the chicken from the pan and place in a bowl to cool.
  • Saute Aromatics
  • In the same pan, add diced onions as well as the minced garlic. Sauté for 2 to 3 minutes until the onion becomes soft and translucent.
  • Toast the Orzo
  • Add the orzo into the skillet and stir it to toast for around 1 minute. This improves the taste that the orzo has.
  • Cook the Orzo
  • Pour into the chicken broth and bring it to a boil. Then reduce the flame to a simmer the cover and let it simmer for 8-10 mins with a stirring every now and then until the orzo is soft and the liquid has been mostly taken up.
  • Make the Creamy Sauce
  • Mix in the heavy cream, as well as chopped Parmesan cheese. Add the chicken that has been cooked Chicken to the skillet.
  • If you're using spinach you can add it at this point and cook until it is wilted.
  • Season and Serve
  • Adjust the seasoning by adding salt and pepper according to your preference. Sprinkle with fresh parsley for an explosion of colour Serve warm.
