Main Ingredients

  • 1 tablespoon olive oil For cooking the chicken.
  • 1 pound chicken breast or thighs, cut into bite-size pieces
  • 3 to 4 cloves garlic, minced
  • 2 cups chicken broth For cooking the pasta.
  • 1 cup milk or half and half For creaminess.
  • 8 ounces pasta (penne, rotini, shells) Any bite-size pasta works.
  • 2 big handfuls spinach To add vegetables.
  • 1/2 cup grated parmesan For added flavor.
  • Salt, pepper, and a pinch of Italian seasoning To taste.
  • Optional: red pepper flakes, lemon squeeze at the end

Instructions
 

Preparation

  • Heat oil in a deep skillet or pot.
  • Add chicken, season with salt and pepper, and cook until it is mostly done.
  • Add garlic and stir for about 30 seconds.

Cooking

  • Pour in broth and milk, then add pasta. Stir and bring to a gentle boil.
  • Lower heat, cover, and simmer, stirring occasionally.
  • Once pasta is tender, stir in spinach until it wilts.
  • Turn off heat and add parmesan. Adjust seasoning as needed.

Notes

The pasta cooks right in the broth and milk, thickening the sauce without draining. Add a squeeze of lemon for brightness if desired.
