  • 2 tablespoons Olive oil For sautéing, choose a good quality oil.

For the Sauce

  • 1 cup Heavy cream For a lighter option, use half-and-half or coconut milk.
  • 2 cloves Garlic Fresh or minced for added depth.
  • 1 medium Onion A sweet onion is ideal.
  • 1 cup Bell peppers A mix of colors adds texture.
  • 2 tablespoons Parsley Freshly chopped for garnish.

Instructions
 

Preparation

  • Dice the onion and bell peppers and mince the garlic.
  • Generously coat the chicken breasts with Cajun seasoning.

Cooking

  • In a large skillet, heat olive oil over medium-high heat and cook the seasoned chicken for 5-6 minutes per side until golden brown.
  • Remove the chicken and let it rest.
  • In the same skillet, add the onions, bell peppers, and garlic, sautéing until softened.
  • Pour in the heavy cream, scraping the bottom of the pan, and let it simmer until slightly thickened.
  • Slice the chicken, add it back into the sauce, and simmer for another 2-3 minutes.

Serving

  • Serve spooned over rice or pasta and garnish with freshly chopped parsley.

Notes

Adjust the Cajun seasoning for spice tolerance and consider adding vegetables like spinach or mushrooms for additional nutrition. Store leftovers in an airtight container in the fridge for up to 3 days.
