Cowboy Caviar
A fresh, flavorful salad with black beans, black-eyed peas, corn, and veggies tossed in a zesty lime dressing. Perfect for dipping or as a side!
- ¾ cup dried black-eyed peas
- 2 cups water
- ¾ cup dried black beans
- 3 cups water
- 1 ½ cups corn
- ½ cup onion diced
- 1 ½ cups bell pepper diced
- 1 cup avocado diced
- 1 ½ cups tomatoes diced
- ¼ cup cilantro finely chopped
- ¼ cup jalapeño deseeded and diced
- ¼ cup extra virgin olive oil
- ¼ cup lime juice
- 1 teaspoon roasted cumin powder
- 1 ¼ teaspoon salt or to taste
- 2 tablespoons maple syrup
- 1 teaspoon cayenne pepper or red chili powder
- ½ teaspoon black pepper powder
- 1 teaspoon garlic powder
Cook black beans and black-eyed peas using your preferred method (Instant Pot or stovetop).
Whisk together dressing ingredients in a bowl.
In a large bowl, combine all vegetables and beans, then pour over the dressing. Toss until everything is well-coated.
Refrigerate for at least 1 hour, stirring before serving.
