Preparation

  • In a large pot, melt the butter over medium heat.
  • Add the diced onion and celery, sautéing them for about 5 minutes until they soften.
  • Stir in the minced garlic and shredded carrot, cooking for another 2-3 minutes.
  • Add the broccoli florets and pour in the vegetable broth.
  • Bring the mixture to a boil, then reduce it to a simmer for about 10 minutes, or until the broccoli is tender.
  • Using an immersion blender, blend the soup to achieve a smooth consistency.
  • Once blended, return the soup to the pot. Stir in the heavy cream and shredded cheddar cheese, allowing it to melt completely.
  • Season with salt and pepper to taste. For a thicker soup, you can mix the cornstarch with a small amount of cold water and stir it in.
  • Serve hot with crusty bread for dipping.

Notes

For a healthier option, use low-fat milk instead of heavy cream and add more vegetables like spinach or zucchini.
