Chicken and Bacon Pasta Salad

A creamy and flavorful pasta salad with chicken, bacon, fresh vegetables, and homemade ranch dressing. Perfect for summer picnics and barbecues.

Ingredients
  

  • 250 g Cooked Pasta about 8 oz
  • 2 Cooked Chicken Breasts cut into chunks
  • 6 Grilled Streaky Bacon Rashers chopped
  • 4 Spring Onions chopped
  • 10 Cherry Tomatoes halved
  • 1/4 Cucumber diced
  • 1 Red Pepper chopped
  • 100 g Cheddar Cheese grated
  • For the ranch dressing:
  • 200 g Mayonnaise about 3/4 cup
  • 100 ml Sour Cream about 1/2 cup
  • 2 tablespoons Parsley finely chopped
  • 2 tablespoons Dill finely chopped
  • 1 Lemon juice only
  • 1 Garlic Clove peeled and finely chopped
  • Salt and Pepper to taste

Instructions
 

  • Mix the ranch dressing ingredients in a bowl.
  • In a large mixing bowl, combine cooked pasta, chicken, bacon, vegetables, and cheese.
  • Pour the dressing over the salad and toss to combine.
  • Chill in the fridge for at least 30 minutes before serving.
