  • 1 pound Italian sausage (mild or spicy, depending on taste)
  • 2 cups elbow macaroni
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes (with seasoning)
  • 2 cups shredded cheddar cheese Feel free to mix it up with mozzarella.
  • 1 can (10.5 oz) cream of mushroom soup Or substitute with a homemade version.
  • 1 cup milk For added creaminess.
  • Salt and pepper to taste
  • Optional toppings: breadcrumbs, additional cheese, or fresh parsley

Preparation

  • In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a large skillet, heat over medium-high heat. Add the Italian sausage and cook until browned, about 5-7 minutes, breaking the sausage into smaller pieces for even cooking.
  • Add the chopped onion and minced garlic to the skillet, sauté for about 3-4 minutes until the onion becomes translucent and the garlic is fragrant.
  • Stir in the diced tomatoes, cream of mushroom soup, and milk. Cook for an additional 3 minutes to allow flavors to meld. Season with salt and pepper as needed.
  • Add the cooked macaroni to the skillet. Fold in 1.5 cups of shredded cheddar cheese, ensuring everything is combined well.
  • Transfer the mixture to a greased 9x13-inch baking dish. Top with remaining cheese (and breadcrumbs if desired) and bake at 350°F (175°C) for about 20-25 minutes, until the cheese is bubbly and golden.

Notes

Consider using low-fat cheese to reduce calorie content while still maintaining flavor. Substitute cauliflower rice for macaroni for a lower-carb option or add spinach for extra nutrients without compromising taste. Leftover casserole can be stored in an airtight container in the refrigerator for up to 3-4 days.
